Key Responsibilities:
Under general supervision, our Artisan Bread Baker, Team Lead oversees the daily production of our Bread Department. Reporting to the Artisan Kitchen Production Manager, the Artisan Bread Baker, Team Lead is responsible for:
• Leading and coordinating a team of artisans to bake our delicious French breads (Baguettes, croissants, and brioche) ensuring Ghyslain flavor, quality, and presentation maintained
• Shape dough to prepare different types of breads
• Adjust oven temperatures to ensure proper baking
• Develops and ensures artisan team follows recipes and scales accordingly
• Assists the Artisan Kitchen Production Manager in development and maintenance of Ghyslain production schedules according to dynamic changes in priorities and supply concerns
• Performs periodic cost of food and labor reports with Artisan Kitchen Production Manager ensuring Bread Department contributes to the goals of the company
• Manages inventory levels for the Bread Department, WIP/Finished Products
• Always clean and maintain kitchen and all tools/utensils promoting a sanitary and safe working environment
• Health & Sanitation – Implements, trains, and monitors health & sanitation processes for the Bread Department
• Daily completes required Batch Tracking/HACCP paperwork
